This morning I woke up, hopped out of bed, and headed to the back door to let the dogs out as per usual. However, this morning I felt a rush of cool air as I opened the door for the first time in about four months. Fall doesn’t officially start for another 11 days and here in Texas we likely won’t see cool, fall like temperatures for another month or two, so I wasn’t about to let this beautiful fall-esque morning go to waste. I made some hot tea, put a cardigan on, and sat outside on the patio with the dogs. It was pretty awesome, at least until the sun started blaring in my eyes and warming everything up. I LOVE easy dinners. Anything that I can throw together really easily with minimal hands on time and as few dirty dishes as possible is A-Okay in my book!
I just got home from a week in Washington state for my Nutritional Therapy class and boy am I exhausted! I took my midterms last weekend and had a total of four days of class all day long. So as I’m sure you can imagine, I’ve been a little busy and a little stressed. Good news is I aced my midterms! Bad news is, I’ve got a pretty nasty cold. I suppose that’s what a whole lotta stress and far too little sleep will do to you.
My husband is a genius when it comes to grilling burgers. He makes the juiciest and most delicious burgers. And it’s for that reason that I put burgers on our weekly meal plan almost every week! That and the fact that pretty much the only time he helps with the cooking is if there is grilling involved.
