I cannot believe that Halloween is on Friday! How the heck did that happen? My husband and I aren’t big Halloween fans. We never dress up or go to parties or decorate or anything like that. It’s just not our thing. But we do like to carve pumpkins. Neither my husband or I are very artistic so when my husband busted out a super awesome Olaf pumpkin the other day I was seriously impressed! Olaf as in the snowman from Frozen. I stuck with the Disney theme and made a Little Mermaid pumpkin, mostly because all the stencils I found for Belle looked WAY too hard.
We also bought costumes for our dogs… ya we are those people. Our golden retriever has a pumpkin costume and our lab is going to be a bumble bee. They look so stinkin’ cute! I think our house is going to be all the little trick-or-treaters favorite. What more could you want than Disney themed pumpkins and two big adorable dogs dressed up in costumes? Oh ya, maybe some candy…
I’m choosing to not eat any crap filled candy this year but that doesn’t mean I’m going to go without! I’m going to be sippin’ on one of these Pumpkin Spice Frappuccinos while I sit on my porch with the hubs and the pups and pass out goodies for the neighbor kids. Since it’s still like 85 degrees here I can get away with an icy cold beverage in the evening but if that’s not the case where you are, this is also super tasty hot! Just skip the freezing of the coffee part obviously.
The best part about this recipe, besides the delicious pumpkin-y-ness, is that you don’t have to spend an arm and a leg for some fancy schmancy drink that doesn’t even have real pumpkin in it! I’ve talked a little about my love-hate relationship with coffee before, so I’ll be enjoying this beverage sans coffee. I’ve been using the Breakfast Blend recipe from The Paleo Approach Cookbook by Sarah Ballantyne which uses roasted dandelion root, roasted chicory and carob to create a coffee-ish beverage without the caffeine and immune stimulants. It’s a pretty tasty alternative if you also don’t do well with coffee. But if you do, feel free to use that obviously!
- 12 oz coffee (or roasted chicory/dandelion blend for AIP)
- 8 oz coconut milk (canned, full fat)
- ¼ cup pumpkin puree
- 2-3 Tbs maple syrup
- 1 tsp cinnamon
- ½ tsp ginger
- ¼ tsp cloves
- dash of mace
- Brew your coffee or Breakfast Blend, let cool and pour into ice cube trays to freeze
- Add frozen coffee cubes, coconut milk, pumpkin, maple syrup and spices to blender
- Blend until smooth
- Pour into a glass, top with cinnamon and serve

The breakfast blend recipe is from the Paleo Approach Cookbook by Sarah Ballantyne so it’s not mine to share. Jessica of Delicious Obsessions makes herbal coffee and I’ve heard rave reviews.
