There is a company called Nikki’s Coconut Butter that makes, you guessed it, coconut butter. Y’all know I’m a big fan of making my own coconut butter, but the people over at Nikki’s Coconut Butter don’t just make plain coconut butter. They make flavored coconut butter. Delicious flavors like vanilla cake batter, macadamia nut cookie, dark chocolate fudge, honey pecan pie, chocolate hazelnut brownie, and pumpkin spiced donut (pause to wipe your drool)!
Well a few weeks ago they kept teasing over on Instagram the fact that their pumpkin spiced donut would be coming back soon. Well I couldn’t wait until it released so, as per usual, I made my own! (Is anyone else sensing a theme here?) I’ve tried several of their other coconut butter flavors, but having never tried their pumpkin spiced donut I can’t say whether or not this tastes like theirs. What I can say is that it is DEE-licous! Looking at the ingredients, the pumpkin spiced donut from Nikki’s Coconut Butter contains pecans, which sounds amazing, but since I’m not eating nuts, I left those out. Between the maple syrup, the vanilla, and the pumpkin pie spice you certainly aren’t missing any pumpkin spice flavor though! And the small amount of coconut oil keeps the coconut butter spreadable at room temperature (at least here in Texas) so you can grab a spoonful at any time!
- 1 batch Homemade Coconut Butter
- 1½ Tbs maple syrup
- ½ tsp vanilla extract
- ¼ tsp salt
- 2 Tbs coconut oil
- 1 Tbs cinnamon
- 1½ tsp ginger
- ¾ tsp cloves
- ¼ tsp mace
- (or sub spices with 1.5-2 Tbs pumpkin pie spice)
- Add all ingredients to food processor and process until combined
So when you’re getting the itch for some fall inspired goodies, but you don’t want a sugar overload, whip up a batch of my homemade coconut butter, and then pumpkin spice it up for a delicious and healthy snack!
