Have you ever watched the show The Following? My husband and I watched roughly half of the first season when it first came on but it was a little intense for me so we eventually just stopped watching. I figured I had enough stressors in my life without adding a completely unnecessary one from a television show. Well, it’s on Netflix now and my husband started watching it this past Friday since he had a four day weekend this weekend for Columbus Day and was home all day by himself. (I know, not fair right?!?!) He was watching it again this morning when I got home from yoga and it was totally distracting! Here I am trying to get ready for work and I was already running late, like really really late, and I can’t stop watching the TV!
I was getting dressed at the speed of snail (that’s totally a thing!) while my eyes stayed glued to the TV and I kept going in and out of the bathroom while putting my makeup on whenever there were loud noises to see what had happened. As per usual there was some stabbing, a little hostage holding, a good dose of torture, and a few deaths. You know, everything you need in an interesting television show.
Despite the rise in my blood sugar I may need to start binge watching that show on Netflix because it’s pretty darn good. So good that I was almost a half an hour late to work this morning. (I hope my boss doesn’t read this…) So if you’re going to watch it, maybe just don’t do it when you should be getting ready for work!
So anyway, about that food….
Keeping with our theme of “Pumpkin All the Things” I’ve got another delicious (and incredibly simple) pumpkin recipe for you today. If you’ve never had avocado pudding before you are probably thinking ew gross, why the eff would I put avocado in my pudding, but trust me when I say it is delicious! The avocado provides the delicious thick and creamy texture of pudding without adding any real flavor since avocados are rather bland.
My first avocado pudding experience came from the Moo-less Chocolate Mousse recipe in Practical Paleo (which I highly recommend you try). A few weeks back I was craving something pumpkin-y but didn’t feel like baking because it was still over 90 degrees here in Texas so I thought why not try to recreate my favorite chocolate avocado pudding pumpkin style. And it turned out pretty fabulous if I do say so myself!
- 1 large avocado (about 1 cup mashed)
- ½ cup canned pumpkin
- 2 Tbs coconut milk
- ¼ cup maple syrup (or honey)
- 1 tsp cinnamon
- ½ tsp ginger
- ¼ tsp cloves
- dash of mace
- (or sub spices for 2 tsp pumpkin pie spice)
- Add avocado and pumpkin to a food processor or blender and puree until combined
- Add coconut milk, adding a little more if necessary until a creamy texture is achieved
- Add maple syrup and pumpkin pie spice, adding more to taste
- Serve immediately or chill in refrigerator
