21 Day Sugar Detox Banana Coconut Macaroons

Ingredients
  • 1 banana (green tipped for 21DSD)
  • ½c coconut milk (canned)
  • 1 egg
  • 2 tsp vanilla extract
  • 2 cups shredded coconut (unsweetened and dried)
  • ¼ tsp salt
  • ½ tsp cinnamon
Instructions
  1. Preheat oven to 350 degrees
  2. In a large bowl, mash banana
  3. Add coconut milk, egg and vanilla extract and whisk until smooth
  4. Add coconut, salt and cinnamon and mix until fully combined
  5. Using a 1 tbs scoop, drop batter onto a parchment lined cookie sheet
  6. Bake for 15-17 minutes until slightly browned
  7. Let cool for at least 5 minutes before consuming
  8. Makes about 1½ dozen
