Paleo Friendly Potato Salad

dairy free, gluten free, grain free, 21 DSD friendly, Whole 30
  • 2lb potatoes, peeled and cubed (can use red, yellow, or white potatoes, or white sweet potatoes for 21DSD)
  • ⅔ c chopped pickles (or relish) (no added sugar for 21DSD)
  • ⅔ c green onions, chopped
  • A double batch of my homemade mayo (or about 1½ cups)
  • 2 tsp mustard
  • 2 tsp pickle juice (no added sugar for 21DSD)
  • ½ tsp salt
  • ½ tsp pepper
  • 6 slices bacon, chopped (optional, no added sugar for 21DSD))
  1. Place potatoes in a large pot and cover with water
  2. Bring to a boil, cover and cook for about 10-15 minutes until fork-tender
  3. Drain and let potatoes cool
  4. Add mayo, mustard, pickle juice, salt and pepper to a small bowl and mix until combined
  5. Stir dressing into potatoes
  6. Add chopped pickles and green onions (and optional bacon)
