Creamy Dreamy Strawberry Mint Popsicles

  • 2 cans coconut milk
  • 1 bunch fresh mint (about 1 packed cup)
  • ¼ cup honey (or more, to taste)
  • 2 cups strawberries (fresh or frozen, I used fresh)
  1. Place coconut milk, mint and honey in a pot over medium heat
  2. Once the liquid mixture comes to a low boil, turn off the heat and cover the pot to steep for 45 minutes
  3. Strain the liquid through a fine mesh strainer and add to blender with the strawberries
  4. Blend until smooth
  5. At this point taste for sweetness and add more honey if desired. You can also add peppermint extract if you'd like it a little more minty but I didn't find this necessary
  6. Pour into popsicle molds and freeze until solid
