Dairy Free Vanilla Bean Ice Cream

  • 1 can full fat coconut milk
  • 2 Tbs honey (or more if you'd like it a little sweeter)
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 1 vanilla bean (if you don't have a vanilla bean just add more extract)
  1. Put coconut milk, honey, vanilla extract and egg yolks into a small pot
  2. Carefully slice the vanilla bean down the middle with a paring knife
  3. Open the vanilla bean and scrape the insides into the pot with a spoon
  4. Place pot on the stove over medium low heat, whisking constantly
  5. Heat until the custard covers the back of the spoon (if you run your finger along the spoon, the custard shouldn't run back in on itself)
  6. Pour into a bowl and cool in the refrigerator for 2-3 hours or overnight
  7. When chilled, place into ice cream maker and let it churn according to manufacturer's instructions (mine took about 20 minutes)
  8. Place in freezer to harden or serve immediately
