Grain Free and Nut Free Banana Muffins

Ingredients
  • 4 bananas, mashed
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 Tbs honey (optional)
  • 1 Tbs coconut oil, melted
  • ½ cup coconut flour
  • 1 Tbs cinnamon
  • ¼ tsp salt
  • 1 tsp baking soda
  • 2 Tbs arrowroot flour
Instructions
  1. Preheat oven to 350 degrees
  2. Grease a muffin tin
  3. Mix bananas, eggs, vanilla, honey and coconut oil in a stand mixer
  4. Add coconut flour, cinnamon, salt, baking soda and arrowroot flour to mixer slowly
  5. Mix until incorporated
  6. Pour batter into muffin tins (about ¼ batter cup per muffin)
  7. Bake for 30 minutes
