Cucumber Mint Salad

  • 1 large or 2 small cucumbers
  • ¼ cup red onion, chopped
  • ¼ cup mint, chopped
  • 1 Tbs olive oil
  • 1½ Tbs apple cider vinegar
  • ¼ tsp black pepper (omit for AIP)
  • ⅛ tsp salt
  1. Cut cucumber in half lengthwise and scoop out the seeds
  2. Slice cucumber into bite size pieces
  3. Sprinkle with salt and place in colander to drain for 20-30 minutes
  4. Pat cucumber dry and place in bowl
  5. Add red onion, mint, olive oil, apple cider vinegar to cucumber and stir until combined
  6. Add salt and pepper and adjust seasoning to taste
  7. Serve right away or store in refrigerator and serve chilled
