Pan-Roasted Brussel Sprouts with Almonds, Apples, & Raisins

Serves: 4-6
  • 2-3 Tbs butter (ghee or bacon grease are also great)
  • 1 lb shaved brussel sprouts (or whole brussel sprouts that have been sliced really thin)
  • ½ apple, cut into matchsticks
  • ¼ cup raw silvered almonds (or sliced or chopped)
  • ¼ cup raisins
  • Salt and pepper, to taste
  • Sprinkle of parmesan cheese (optional)
  1. Melt butter over medium high heat.
  2. Add brussel sprouts and cook for 5 minutes, stirring frequently.
  3. Add almonds and apple and cook additional 5 minutes until almonds are toasty and the apple is soft. Stir frequently to avoid burning the almonds.
  4. Add raisins, salt and pepper and toss.
  5. Optional- sprinkle parmesan cheese on top while brussel sprouts are still hot.
