Cheesy Kohlrabi and Potato Gratin

  • 3 medium kohlrabi (about 1 pound), peeled
  • 3 medium red potatoes (about 1 pound), peeled
  • 1¼ cup full fat coconut milk
  • 2 tsp unrefined salt
  • 1 tsp ground pepper
  • ¼ tsp nutmeg
  • 1 cup grated grass fed aged cheddar cheese (like Kerrygold)
  • Butter, ghee, or coconut oil for greasing casserole dish
  1. Preheat oven to 375 degrees and grease 1½ quart casserole dish.
  2. Slice kohlrabi and red potatoes into ⅛ inch slices, trying to make them as even as possible. You can use a mandoline if you have one or just a sharp knife.
  3. Mix coconut milk with salt, pepper and nutmeg and whisk to combine.
  4. Layer kohlrabi and potato slices along bottom of casserole dish, making sure they are interspersed.
  5. Between each layer, pour a little of the coconut milk mixture.
  6. Continue layering until you've used up all of the kohlrabi and potato slices and pour the remaining coconut milk mixture on the top.
  7. Sprinkle cheese over the top and bake for 60-75 minutes until it is bubbly and the cheese has browned slightly.
