Rosemary Thyme Spiced Meatballs with Cardamom Butternut Squash Puree

Ingredients
  • 1 pound ground beef
  • 1 egg
  • 1 tbs coconut flour
  • 1 tsp sage
  • 1 tsp thyme
  • 1 tsp rosemary
  • ½ tsp salt
  • ¼ tsp white pepper (or ½ tsp black pepper)
  • ¼ tsp turmeric
  • 1 medium butternut squash, peeled and chopped
  • 3 tbs ghee
  • 1 tsp salt
  • ¼ tsp cardamom
  • ¼ tsp cinnamon
Instructions
  1. Preheat oven to 400 degrees
  2. Add first nine ingredients to a mixing bowl and combine thoroughly
  3. Form meat mixture into golf ball sized meatballs and place on parchment paper lined baking sheet
  4. Bake for 20-25 minutes
  5. While the meatballs are baking, steam butternut squash until fork tender (15-20 mins)
  6. Add cooked squash, ghee, salt, cardamom and cinnamon to food processor and blend until smooth
