Sunflower Seed Butter

  • 1 cup raw sunflower seeds
  • ¼ tsp salt
  • 1 Tbs coconut oil
  • ¼ tsp vanilla (optional)
  • 1 tsp honey (optional- omit for 21DSD)
  1. Preheat oven to 400 degrees
  2. Spread sunflower seeds onto rimmed baking sheet in one layer
  3. Roast for 10 minutes, checking on them every few minutes so they don't burn
  4. Let cool slightly before placing in food processor
  5. Blend until smooth, stopping every few minutes to scrape the sides (takes about 10-15 minutes)
  6. Add salt, coconut oil, and optional vanilla and honey and blend until incorporated
