Creamy Spring Onion Soup

  • 2T ghee
  • 1 bunch spring onions, roots and green tips, chopped
  • 4 cloves garlic, minced
  • 2 small or 1 large head cauliflower cut into florets
  • 3 cups chicken stock (homemade is preferred)
  • 1 tsp salt
  • ½ tsp pepper (omit for AIP)
  1. In a large pot over medium heat melt ghee
  2. Add onions and garlic and cook until translucent
  3. Add cauliflower and chicken stock
  4. Bring to a boil, cover and cook for 15 minutes or until cauliflower is fork tender
  5. Let cool slightly before blending (you may need to do this in batches)
  6. Add salt and pepper to taste]
  7. Makes about 5 cups
