AIP "Chocolate" & Peppermint No Bake Macaroons

Makes about 2 dozen
  • 3 Tbs coconut butter, softened
  • 3 Tbs coconut oil, softened
  • ¼ cup carob powder (or cocoa if not on AIP)
  • ¼ cup maple syrup or honey
  • 2 drops peppermint essential oil (or 1 tsp peppermint extract)
  • 2 cups shredded coconut
  1. Place coconut butter, coconut oil, carob powder, maple syrup and peppermint in a bowl and stir to combine.
  2. Add coconut and mix until incorporated.
  3. Form 1 inch balls and place onto parchment lined cookie sheet
  4. Set in fridge to chill, about 30 mins
  5. Store in refrigerator
  6. Soften slightly at room temperature before serving
