Turkey Pot Pie

  1. For the crust:
  2. Combine flour, salt and gelatin in a mixing bowl
  3. Cut shortening into flour mixture with a pastry cutter or two knives until it is the size of peas
  4. Add applesauce, water and vinegar and mix with a spoon until combined
  5. Roll out dough between two pieces of parchment
  6. For the filling:
  7. Melt fat in a large pot over medium heat
  8. Add onion and cook until translucent, about five minutes
  9. Add celery and frozen veggies and cook for 3-5 minutes
  10. In a small bowl mix arrowroot flour with ½ cup cold chicken broth until combined
  11. Pour arrowroot mixture over veggies and stir until combined
  12. Add coconut milk and remaining 2 cups broth
  13. Bring to a boil, reduce heat to med low and simmer until it thickens, about 10 minutes
  14. Add salt and spices, adding more to taste
  15. Add shredded chicken and simmer for additional 10 minutes
  16. Pour filling into ramekins (should fill about 5-6)
  17. Place rounds of dough on top of ramekins
  18. Cut 4-5 slits in top of dough
  19. Place ramekins onto rimmed baking sheet
  20. Bake at 400 degrees for 20 minutes until crust is golden
  21. Let cool for 5-10 minutes before serving
