As much as I would like to be, I am not a big tomato fan. Tomato soup? Sure. Ketchup? Absolutely. But plain tomatoes or tomatoes in a salad or on a burger? I’ll pass! One tomato based thing I really do love though (besides ketchup, because who doesn’t love ketchup) is salsa. So when I got a big bag of tomatoes in my CSA basket, the first thing I thought of was salsa. Especially since I already had some cilantro waiting to be used up. So I made some salsa. And you can’t have salsa without guacamole! So what did I do? I used the fresh homemade pico in the guacamole. Best idea ever! Yes I know I’m not the first person to come up with this idea, but I had never made guacamole with homemade pico before and now I don’t think I could make it any other way. This is the best guacamole I’ve ever made, and I’ve made a lot of guacamole.

To make my life easy, and because I don’t really like super chunky pico de gallo, I used my food processor. You could of course also make it by hand. Just chop all the ingredients really small and mix them together in a bowl. I do like chunky guacamole though so that I did by hand. But basically all you’re doing at that point is mixing in some of that pico de gallo you just made and adding a little extra lime juice, salt and jalapeno. Doesn’t get any easier than that!

Easy Pico de Gallo & Guacamole

  • For the pico de gallo:
  • 2 cups chopped tomatoes
  • ⅓ cup chopped red onion
  • ½ jalapeno, chopped
  • ½ cup cilantro
  • Juice of 2 limes
  • ½ tsp salt
  • 1 clove garlic
  • For the guacamole:
  • 3 avocados
  • Juice of ½ lime
  • ¾ cups pico de gallo
  • ½ tsp salt
  • ½ jalapeno, chopped
  1. For the pico de gallo:
  2. Add all ingredients to food processor and pulse until thoroughly combined
  3. Alternatively, chop all ingredients and then mix by hand
  4. For the guacamole:
  5. Mash avocados with potato masher or the back of a fork
  6. Add in lime juice, pico de gallo, salt, and jalapeno until combined
  7. Add more/less salt or jalapeno to taste

I made this guacamole and salsa to go with tacos (recipe will be posted next week) and it was the perfect combination. I hope you enjoy it as much as I did!

      Same! I’m typically too lazy. Usually I’ll just mash some avocado with salsa which is good in a pinch but this recipe is way better!

    YUM!! I love pico de gallo and salsa, but I never make it! I can’t wait to try your recipe! I have everything for the pico, I just added it to my list to make tomorrow 🙂
