So I don’t know if you know this about me, but I went through a vegetarian/almost vegan phase several years ago. Just one of the many experiments I’ve done with my diet to try to figure out what works for me. Obviously that didn’t…. Anyway, there was this recipe I used to make all the time because it was so easy and delicious and I can’t for the life of me find it. I’m sure it was from some vegan blog or something, but I’ve googled the heck out of it and searched all over Pinterest and it’s nowhere to be found. All I remember is that it had black beans, bell pepper and lime juice. Helpful, right?

Since I’m not a big bean eater I wanted to make something reminiscent of that recipe minus the black beans. Obviously if you do like beans and you feel great eating them, then by all means add some properly prepared black beans. I ate mine with some pulled pork and topped it with this delicious Avocado Lime Crema. These sweet potatoes certainly don’t need any extra oomph since they have so much delicious flavor on their own, but I liked the idea of adding a little extra flavor and a little more healthy fat in the form of avocados for the perfect balanced meal.

Despite the fact that I couldn’t find the original recipe, and that I haven’t even had the original recipe in a couple of years, I think I totally nailed it! The flavors are just as I remember and it totally hit the spot! If you’re planning on making these for dinner during the week and don’t have a ton of time (or just don’t want to) to cook dinner after a long day of work, just pre-bake your sweet potatoes and throw a pork shoulder or a whole chicken in the crock pot and then all you’ll have to do when you get home from work is saute some veggies and mix it all together. Doesn’t get any easier than that!

Cumin Lime Stuffed Sweet Potatoes with Avocado Lime Crema

Serves: 3-4
  • For sweet potatoes:
  • 3 medium sweet potatoes (about 1½ cups mashed)
  • 1 Tbs cooking fat (ghee, butter, coconut oil, etc)
  • 1 small onion, chopped (about 1½ cups)
  • 1 bell pepper, chopped (about 1½ cups)
  • 2 cloves garlic
  • 2 tsp cumin
  • 1 tsp salt
  • 1 Tbs lime juice
  • 1-2 cups shredded chicken or pork (optional)
  • For Avocado Lime Crema
  • 1 large avocado
  • 2 Tbs coconut milk
  • 2 Tbs lime juice
  • 1 tsp salt
  1. For sweet potatoes:
  2. Preheat oven to 400 degrees and bake sweet potatoes for 45-60 minutes or until soft.
  3. Meanwhile, melt ghee over medium heat.
  4. Add onion and garlic and saute until soft, about five minutes.
  5. Add bell pepper and cook an additional five minutes.
  6. When sweet potatoes are done baking, scoop out insides, leaving the skins intact.
  7. Add sweet potato to skillet with cumin, salt, and lime juice and stir to combine.
  8. Scoop stuffing into sweet potato skins and top with chicken or pork and avocado lime crema.
  9. For Avocado Lime Crema:
  10. Add all ingredients to blender or food processor and blend until combined.

    Oh. Mah. Goddess. We made these tonight for dinner and can I just say, KUDOS to you for creating such a delicious recipe! We use cubed chicken on top and LOVED it. This WILL become a regular in our rotation, it is DIVINE! FIVE stars! NOM!
