I feel like I’ve been a little MIA recently. Probably because I’ve spent the last few weeks with my brain fully engrossed in the land of Rosewood, PA where everyone is beautiful and a liar and you have to watch your back constantly, AKA watching far too much Pretty Little Liars. The good news is I’m all caught up now and OMG we are FINALLY going to find out who “A” is on Tuesday! I’m freaking out guys! I’m not even going to try to speculate at who “A” is because, knowing this show, I’ll be totally wrong. And I swear this better actually be the real deal “A” reveal and not another “it’s A except really they’re just working for A or they’re just another psycho with no relation to A” type of thing. Because I’m tired of that. Got that, Marlene King?!?!
I was craving something bready this morning (is bready a word? Because it should be) and I figured eating my husband’s glutenous naan bread that we got him at Costco last week would not be in my best interest. But as I was scrolling through Pinterest (you should totally follow me!) I found this grain free flatbread recipe from The Savory Lotus and figured it was fate! So I took a brief break from PLL (what else?) and whipped up the flatbread. So tasty!
I don’t have any left (don’t judge me please), but if I did I would totally use it as a wrap for this Cranberry and Pepita Chicken Salad. It would be like a real life chicken sandwich! Weird, right?!?! Fortunately you don’t need any bread for this chicken salad recipe. It’s super delicious over a bed of greens or on it’s own. Seriously. It’s kind of addicting. And in case you were wondering, pepita is just a fancy way of saying pumpkin seed. I could have called this Cranberry and Pumpkin Seed Chicken Salad, but I like pepita better than pumpkin seed. So there.
pumpkin seeds pepitas and dried cranberries make this recipe seem kind of fall-y (also a word just like bready, I swear) to you or is that just me? Maybe I’m just wishing it was fall so much that I’m subconsciously adding fall flavors to summery foods. Or maybe it’s totally on purpose. Who knows? I’m weird. Can it please be fall now? Please?
- Combine all ingredients in a large bowl and stir to combine.
