It’s the day after Thanksgiving which means it’s time to decorate for Christmas! At least that’s what we do in our house. Before we got married my husband was a strict December 1st purist, meaning he wouldn’t do anything Christmassy until December 1st. But when I was growing up we always started decorating for Christmas the day after Thanksgiving. In fact, I remember waking up on Thanksgiving morning to my dad cranking up the Christmas tunes and my mom always set the table for Thanksgiving dinner with her Christmas dishes. So I suppose the Christmas festivities started on Thanksgiving day, but the tree trimming and hall decking didn’t start until the next day. Ya, we are big into Christmas in my family. I think I’ve mentioned this here before but I’ve been getting a CSA basket recently from an awesome farm out of Austin, Johnson’s Backyard Gardens. If you don’t know what a CSA is it stands for Community Supported Agriculture. Basically, you get a weekly basket full of whatever the farm is growing at the time. It’s pretty fantastic. So I’ve been receiving all these awesome veggies each week, and since my husband has been gone the last couple of months (he got home last week!) it was up to me to eat ALL the veggies. Of course, I don’t mind since I LOVE vegetables, but it’s been a bit of a challenge to find new and exciting ways to eat them all before they go bad. And that’s how this Thai Curry Soup came to be… a bunch of veggies that needed to be used up quick before they went bad! Continue reading
