Pan-Roasted Brussel Sprouts with Almonds, Apples, & Raisins

Gluten free and Paleo friendly Pan-Roasted Brussel Sprouts with Almonds, Apples, & Raisins inspired by my recent anniversary dinner sans husband. |

Is it brussel sprouts or brussels sprouts? I have no idea. Whenever I type “brussel sprouts” on my phone, which is quite often surprisingly (or not considering how tasty brussel/brussels sprouts are) autocorrect always changes it to “Brussels sprouts.” I’m going to call them brussel sprouts because that makes more sense in my brain. And it’s my recipe so I can call lit whatever I want, right? I could call it “pan-roasted little baby cabbages with some other shit in it” but I won’t since that’s a mouth full and doesn’t sound very pleasant to eat. So we will stick with pan-roasted brussel sprouts with almonds, apples, & raisins. Okay? Still a mouthful, but it makes me want a mouth full (Hehe see what I did there?). Continue reading

We’ve all heard the old adage “breakfast is the most important meal of the day.” I have to say I agree with this statement for the most part. Starting your day with a good healthy breakfast helps to balance your blood sugar throughout the day, jump starts your metabolism, gives you more energy, and provides you with the nutrients needed to help you concentrate on whatever it is you need to do that day. Whether you’ve got a long day at the office or a full day of play with your kids, we all could use the extra assistance a healthy breakfast provides. Continue reading

Cheesy Kohlrabi and Potato Gratin

So I’m slicing up some kohlrabi and some potatoes in super thin slices, preparing for to make this recipe. And I’m thinking to myself, “is this a gratin or are these scalloped potatoes?” Being the curious person that I am, I googled “gratin vs scalloped potatoes” to see if there was a difference. Turns out there actually is a difference, but in the true American way, we have kind of made them our own (aka we put cheese on everything) and in doing so, we muddled them up. Continue reading

Roasted Carrots with Carrot Top Pesto

Roasted Carrots with Carrot Top Pesto | #paleo #dairyfree #glutenfree

My husband and I are not the most sociable of people. Sure, we have friends and very much enjoy hanging out with them. But we also very much enjoy being home. We are that totally lame home body type of couple.  But hey, it works for us so don’t judge 🙂 So when it comes to Christmas time, we aren’t exactly crazy busy going to different holiday parties, like I hear most people are this time of year. Maybe it’s because we don’t live near our families, maybe it’s because we don’t have kids, or maybe it’s simply because we are that totally lame home body type of couple like I said before. Who knows?!? But I’m kind of okay with it. I’ll just stay home and drink my Hot Buttered Rum and make sugar cookies with my husband and my puppies. Wow that sounds way lamer when I actually write it out than I did in my head. Maybe next year we will work on that whole sociable thing… Continue reading
