Around this time last year I made some homemade white chocolate with the goal of using it to make peppermint bark. I LOVE peppermint bark. It’s one of my favorite holiday treats. But I just didn’t feel good about consuming the white chocolate normally found at grocery stores since it’s typically made with vegetable oils, cow’s milk powder, and refined sugar, none of which are high quality I’m sure. Sure, you can find decent white chocolate chips out there (like this one), but they are hard to find, expensive, and still contain dairy and soy. Continue reading
Last year I deemed October the month of Pumpkin All the Things! I made a bunch of different recipes, sweet and savory, and indulged in all the pumpkin goodness all month long. It was glorious! The problem was, I think I wore myself out on pumpkin. It’s now the end of October, and beyond adding a little pumpkin pie spice to a few protein shakes I have had zero pumpkiny foods this fall. Seriously, none! It’s not that a little pumpkin bread or a pumpkin spice latte doesn’t sound appetizing. It’s just that it doesn’t appeal to me enough to go through the effort of making it. Which, let’s be honest, is probably a good thing.
I’m not counting on that lasting too long though. I’m sure I’ll be craving all things pumpkin here sooner or later. And you can bet your ass I’ll be making my favorite paleo and AIP friendly pumpkin pie for Thanksgiving! It’s suuuuuper good. Dang, now I want pumpkin pie. Maybe I’ll have to go make one of these pumpkin recipes after all to tide me over. It is Halloween after all.

While I’m not the biggest fan of Halloween and all the Halloweeny festivities, I do enjoy a nice Halloween treat. And while I certainly won’t judge anyone for indulging in a little candy this Halloween, I plan on avoiding your typical M&M’s and Skittles in favor of this candy corn inspired treat. The color of this Candy Corn Pudding is inspired by candy corn, not the flavor. Which is cool with me since I hate candy corn, but I love pineapple and mango which is what this pudding actually tastes like. Continue reading
